Perfect for afternoon Fika, coffee & sweets with those you love!

Banana bread, banana cake, and banana bars have always been a favorite! Growing up we indulged in these treats often with sugary smiles. This recipe is inspired by these darling notepads we were gifted and the search for an afternoon Fika cake that is not too sweet! My favorite part of each day is transitioning to work from home in the afternoon and spending a few moments catching up over coffee and cake. Some days we opt for hummus and local veggies or apples and nut butter if in season, and other days, we simply delight in a slice of cake! This cake is naturally gluten free for all to love!

Ingredients:

  • 1 Stick ( 1/2 C.) Organic butter
  • 1/2 C. Sugar ( Up to 1 C for sweet banana bread flavor)
  • 3 Organic or Local Eggs
  • 3 Ripe Bananas, Mashed
  • 1 Tbsp Vanilla or seeds of 1 vanilla bean pod
  • 1 C. Brown Rice Flour
  • 3/4 C. Sorghum Flour
  • 1/2 C. Almond Flour
  • 2 tsp. Baking Powder
  • 1 tsp. Salt
  • 1/2 tsp. Baking Soda
  • 1/2 C. Yogurt ( We use Fage or for non dairy Culina)
  • (Note: if you are able to eat gluten, simply use 1 1/2 C. traditional flour or an all purpose GF flour in a pinch in place of the brown rice, sorghum, and almond flours)

Pre-heat your oven to 350 degrees. In a stand mixer, cream together butter and sugar. Slowly add in the organic eggs 1 at a time. If you are using 1/2 C sugar, brown sugar or classic, use 3 organic eggs. If you use 1 C sugar for extra sweetness, reduce the eggs to 2. Add softened butter and vanilla to the wet mixture along with the yogurt and mashed banana. Bonus points if you brown the butter and use brown sugar for a delectable hostess worthy treat! Slowly incorporate the dry ingredients into the wet ingredients in the bowl of a stand mixer, mixing only until incorporated. Line a loaf pan, cake pan, or muffin tin with parchment paper. We love this compostable brand! Bake at 350 approximately 60 minutes for a loaf, 30 minutes for muffins, and around 40 minutes for a cake pan.

Remove your cake from the oven and allow to cool on a cooling rack. Optionally brush the top of the cake with butter and sprinkle with powdered sugar. Additionally make a simple glaze from powdered sugar, vanilla, and water or milk or a cream cheese frosting from powdered sugar, vanilla, and a block of cream cheese.

Enjoy your afternoon Fika, coffee and sweets, with those you love! Fika is a Swedish ritual and routine enjoyed around 3pm each afternoon. Can you be fully present in the moment? Feel your steamy mug of coffee in your hands, notice the glimmer in the eye of your companion as you engage them about their passions, or take a moment of gratitude for the beautiful coffee cup you love! Fika is a beautiful time to practice being fully present and immersed in the moment as well as a time for community and connection.
